- Preheat oven to 425° F. Line Sheet Pan with Sheet Pan Liner.
- Dice sweet potato; place in Multipurpose Steamer. Cover; microwave on high 2 min. Add cauliflower and microwave 2 more min.
- Meanwhile, cut chicken into bite-size pieces. Place chicken and chickpeas on separate section of the Sheet Pan. Pat chickpeas dry, then drizzle with oil; toss until coated.
- Add sweet potato and cauliflower to the pan, keeping items separate. Arrange in a single layer on pan as best you can. Season with salt and pepper, if using. Roast 13–15 min or until chicken is cooked through.
- Meanwhile, slice tomatoes in half and cube avocado.
- To assemble, divide spinach between 4 bowls. Add chicken, chickpeas, and veggies to bowls. Top with avocado and drizzle with dressing.
If cauliflower florets are too large, chop into smaller, bite-size pieces.
Separating the ingredients on the Sheet Pan gives the chickpeas their own space so they can get a little crispy!
