“Proats” are trending—protein oats, that is! They’re the best way to get you going in the morning, with protein coming at you from all sides: a protein blend, cottage cheese, and oats. And, for even more of a protein boost, opt for soy or 2% cow’s milk instead of almond. This breakfast is extra fun because you’re cracking into a delicate, chocolatey, magic shell to start your day. Easily double up the recipe so that you have more breakkies ready to go for a busy week ahead.
- In a blender, combine oats, cottage cheese, protein blend, and milk. Blend until smooth, scraping down sides as needed.
- For the chocolate topping, in a microwave safe bowl, add chocolate chips and coconut oil. Microwave on high in 20 sec intervals until melted, stirring between each interval, about 40 – 60 sec.
- Divide oat mixture between 2 bowls or containers (about 1 cup each). Top with melted chocolate. Gently swirl the containers to create a thin, even layer of chocolate on top. Cover and store at least 1 hr or overnight.
For even more nutrition, add 1 tbsp chia seeds to oat mixture before blending.
Serve with 1 cup berries or sliced apples.
